Pétillant Naturel or Rifermented in bottle

In the vineyard of the region Pinella in Cocconato d'Asti with organic cultivation certified, Nebbiolo grapes are grown that we vinify in Rosato.

After a selective manual harvest, the vinification in rosé with soft pressing. The fermentation is spontaneous and conducted at temperature controlled. 10% of the small must production is then stored cold to avoid fermentation and have available the sugars of the Nebbiolo grape, that, with the new moon of March, is added to the finished wine. From this the fermentation that generates the characteristic foam takes place.

Fermenting in bottle you get a naturally sparkling Nebbiolo Rosato with bottom. "Corked" to crown can be tapped as a classic method for be able to consume it either clear or agitated and opened, to make it opalescent that with its residues expresses freshness and a delicate fruit.

Starting from the aperitif, excellent with fish and fresh cheeses and cold cuts is ideal as an aperitif served very cold
