After a selective manual harvest, with sorting of the perfectly ripe BIOLOGICAL grapes, follows the traditional vinification of the grapes in purity with maceration of 10/15 days by removing part of the numerous grapeseeds, in dialect Piemontese called "Grignole", from which derives the name.
The carefully controlled fermentation until malolactic is followed by 4 months of aging in cement tanks.
The floral notes of rose and carnation are intertwined with spicy hints of white pepper, creating a slightly aromatic bouquet that is fine and complex. The taste is fresh and clear with a subtly bitter aftertaste
